This is one of our favorite weeknight suppers. I originally found the recipe on eatwell101. Over time I changed it up a bit. It is quick, easy, and so delicious. Add roasted green beans or a simple chopped salad for a lovely meal!
1/2 cup soy sauce
2 tablespoon olive oil, divided
1 teaspoon Tabasco
2 pounds strip steak (or your favorite cut), sliced into strips against the grain
1 1/2 pounds baby potatoes (yellow, red, fingerlings, or whatever you like best), sliced
4 tablespoons butter, divided
4 cloves garlic, minced
1 teaspoon fresh thyme, chopped
1 teaspoon fresh rosemary, finely chopped
a pinch red pepper flake (optional)
salt and pepper to taste
In a medium bowl mix soy sauce, 1 tablespoon olive oil, Tabasco and black pepper. Add steak and allow to marinate for 30 minutes. In a large skillet heat 1 tablespoon olive oil and 2 tablespoons butter. Add the sliced potatoes and cook about 10 minutes or until fork tender. Place the potatoes on a plate covered with paper towel. Add the remaining butter and garlic to the skillet. Place the steak around the skillet in one layer. Cook about 2 minutes or until the steak browns. Flip each piece and cook on the other side until it is done to your liking. Push the steak to one side and add the potatoes back in on the other side. Add the herbs, red pepper flake, and salt and pepper. Sauté until the skillet is sizzling and everything is hot. Serve immediately.
