These muffins are easy and delicious. You only dirty one bowl and no mixer is needed. They are perfect for breakfast, lunch or dinner on a blustery fall day! And they make your kitchen smell amazing!
1 cup canned pumpkin puree
2 eggs
1 cup sugar
3/4 cup vegetable oil
1 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon vanilla
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon salt
1 1/2 cups semi sweet chocolate chips
Preheat oven to 400 degrees. Place paper liners in a 12 cup muffin tin. Lightly spray each liner with a little cooking spray. In a large bowl whisk pumpkin, eggs, sugar, and oil until combined. Add flour, baking soda, baking powder, vanilla, cinnamon, nutmeg, and salt. Mix until incorporated. Fold in most of the chocolate chips, reserving a handful to sprinkle on top of the muffins. Distribute the batter evenly in the muffin tin. Sprinkle each muffin with a few chocolate chips. Bake for 15-18 minutes or until a cake tester comes out clean. Let them cool in the tin for 5 minutes. Remove and enjoy!
