Banana Bread

I know you can use a million different recipes to make banana bread, but this one is the easiest! It uses one bowl and no mixer. I can whip it together when the kids are still sleeping and they wake up to the smell filling the house. I throw in a handful of chocolate chips for additional kid approval… Who am I kidding? I love the chocolate too. Enjoy!

1 stick unsalted butter, room temperature

1 cup sugar

3 ripe bananas, lightly mashed with a fork

1/2 teaspoon salt

2 eggs

1 teaspoon vanilla extract

1 teaspoon baking soda

1 teaspoon baking powder

1 1/2 cups bread flour

1/2 cup chocolate chips

Preheat the over to 350 degrees. Grease a 9 by 5 loaf pan. In a mixing bowl combine the butter and sugar. Add the bananas, salt, eggs, vanilla, baking soda, baking powder, and all of the flour except 1 tablespoon. Mix well. Add the remaining flour to the chocolate chips and stir to coat. Fold the floured chips into the batter. Pour the batter into the pan, and sprinkle a few more chips over the top. Bake for 45 to 50 minutes or until a toothpick comes out clean. Do not overbake.

Note: Adding flour to the chocolate chips stop them from sinking to the bottom of the batter.
