This is one of my go to recipes for a week night meal, casual dinner party, or to deliver to a sick friend. It is inspired by an Oprah article about Prince William’s favorite entrée, Cottage Pie. After making the recipe, I decided I could do it quicker and easier and…almost as good. I hope you enjoy one of our favorite comfort meals!
1 1/2 pounds of ground beef or meatloaf mix
1 small onion, chopped
1 tablespoon Kitchen Bouquet Browning & Seasoning Sauce
1 tablespoon Worcestershire sauce
1 teaspoon salt
1/4 teaspoon nutmeg
1/4 cup flour
1 cup water
1 16 ounce bag of frozen mixed vegetables (carrots, peas, corn, and green beans)
1 32 ounce package of Bob Evans Original Mashed Potatoes
2 cups shredded Colby-Jack cheese
Preheat oven to 350 degrees. Prepare a 13 by 9 baking dish with cooking spray. Brown meat over a medium heat. Drain off most of the grease and add the onion. Sauté until tender. Add Kitchen Bouquet, Worcestershire and seasonings. Stir well. Add flour and cook for two minutes stirring constantly. Add water and bring mixture to a boil until it thickens. Pour meat mixture into baking dish. Sprinkle the frozen vegetables over the meat. Warm the mashed potatoes in the microwave until they are soft. Whip them up with a spoon. Spread them on top of the meat and veggies. Bake for 40 minutes or until the potatoes are slightly browning and the meat is bubbling. Top with cheese and put back in the oven for 5 minutes. Serve sprinkled with a pinch of salt, pepper and additional nutmeg to taste. Enjoy!
