This lovely recipe has been in my family for years. I believe it came from our dear friend Debbie McCreight. As a teenagerI remember waking up to a birthday breakfast of it, and now my family cheers when they smell it in the oven. Serve it with crisp bacon and fresh berries or by itself. The leftovers make the best midnight snack warmed in the microwave too!
1/2 cup vegetable oil
2 eggs, slightly beaten
1 cup sugar
1 cup quick oats
2 cups rolled oats
2 heaping tablespoons baking powder
1 teaspoon salt
1 cup milk
1 teaspoon vanilla
1 teaspoon cinnamon
1/4 teaspoon nutmeg, freshly grated is best (optional)
Preheat oven to 350 degrees. In a medium bowl, combine all ingredients with a wooden spoon. Pour in a greased 8 by 8 glass baking dish. Bake uncovered for 25 to 30 minutes or until set in the middle. Serve in bowls with a sprinkle of brown sugar, cinnamon, and a little warm milk.
